We’re sure y’all can imagine that our excitement around holidays mostly has to do with good food! And with scallops $5 off per pound and plenty of options for natural and locally produced bacon, we thought we’d share this recipe for Bacon Wrapped Scallops to inspire some Valentine’s Day feasting!
2lbs sea scallops
3 T butter
1 T minced garlic
1⁄3 C chicken broth
Cut bacon strips in half and wrap around each scallop; secure with toothpick.
Arrange the wrapped scallops on a baking sheet, and broil 5 inches from heat for 3 minutes per side, or until bacon is crisp.
In small skillet, melt butter; add garlic and saute for 1min. Add broth and bring to a boil, then cook for 2min.
Place scallops in large bowl; pour broth over, Gently toss to coat.
