A New Cheese on the Block

The specialty department is rolling in a new favorite hailing from the creameries of Sonoma, California. Produced by Vella Cheese Company, this 10-month aged Dry Jack is probably the first true ‘American Original’ cheese.
There are many stories behind its origin – frustrated 20th century Italian settlers attempting to create a suitable Parmesan substitute, a cuisine combatant during WWI when aged European cheese was in short demand, or an accidental emergence when fresh wheels of Monterey Jack were forgotten and rediscovered many months later ‘aged and delicious’….
Despite its mysterious beginnings, what we can tell you for sure is that the Dry Jack, with its sweet and nutty flavor and deeply satisfying caramel finish, is one heck of a savory treat. Made from raw cow’s milk and sealed in a mixture of coffee and cocoa, the cheese boasts a firm, dry, and crumbly texture.
This cheese can be used like Parmesan or eaten just as it comes with some lovely fruit! It’s great for grating, shredding, slicing, cooking or just plain eating. Marvelous in toasted cheese sandwiches, omelets, souffles or shredded over pasta, soups, or tacos. And at $4 off per pound, we won’t judge you for sneaking it in with every meal.
