Granny Smith Guacamole

Got a hankering for a great snack but have little time to spare? This simple recipe makes for a quick and nutritious dip or a perfect side dish for light, summery meals. Add a dollop to your favorite salad or burger! The fresh apple tartness and the just-right touch of heat from raw jalapeno are a match made in heaven. We keep coming back for more. INGREDIENTS:
1 Granny Smith Apple, finely chopped
1 Avocado, chopped
1 Jalapeno, finely chopped
1 Lime, juiced (or ~3 T. of Lime Juice)
1 Clove of Garlic, minced
2-3 Sprigs of fresh Cilantro, finely chopped
Salt
Paprika

INSTRUCTIONS:
In a medium-sized bowl, mash the avocado. Add lime juice, apple, garlic, and jalapeno. Add salt and paprika to taste (about one tsp. of each). Mix until all ingredients are well incorporated. Add more seasoning as needed. Garnish with another dash of paprika and a sprinkling of cilantro. Serve with your favorite tortilla chips or vegetables.
